Mashed Potatoes/Purée de Pommes de Terre

This recipe for mashed potatoes is my favorite. Eating them takes me back to my childhood

These mashed potatoes are made with egg yolks and a little bit of milk, which gives them a great consistency I like. These are also terrific, if you add some butter.

It’s a great side dish. Be sure to make extra if you have guests, because it’s always a big hit!

 

Preparation : 15 minutes   Cooking : 15 minutes in the presser cooker  Serves : 4

Ingredients :

  • 1 kg (2.20 pounds) potatoes (I use russet potatoes)
  • 2 egg yolks
  • 10 cl (100 ml) (3.50 oz) warmed milk
  • salt and pepper
  • parsley

Directions :

  1. Wash the potatoes and cook them, with the skin, in a presser cooker, about 15 minutes depending on the size.
  2. Make sure they are cooked with a knife : the blade should be easily inserted. Peel and crush them with a fork or a potato masher.
  3. Add the egg yolks one by one, mixing well. Add salt and pepper to taste.
  4. Add the milk little by little, mixing, until the desired consistency.
  5. Sprinkle with chopped parsley, before serving.

Préparation : 15 minutes  Cuisson : 15 minutes à l’autocuiseur   Pour 4 personnes

Ingredients :

  • 1 kg de pommes de terre pour purée
  • 2 jaunes d’oeufs
  • 10 cl (100 ml) de lait chaud (ou plus, selon l’onctuosité souhaitée)
  • Sel et poivre
  • Persil

Directions :

  1. Lavez les pommes de terre et faites-les cuire, avec la peau, dans un autocuiseur, environ 15 minutes selon la grosseur.
  2. Vérifiez qu’elles sont cuites à l’aide d’un couteau : la lame doit s’enfoncer facilement. Pelez-les et écrasez-les à la fourchette ou au presse-purée.
  3. Ajoutez les jaunes d’oeufs un par un en mélangeant bien. Salez et poivrez.
  4. Ajoutez le lait petit à petit, en mélangeant, jusqu’à obtenir l’onctuosité souhaitée.
  5. Saupoudrez de persil ciselé, si vous le souhaitez, au moment de servir.

 

Quelle délicieuse purée de pommes de terre! Elle ressemble à celle que ma grand-mère faisait.
