Chocolate Cake with Crème Anglaise

This cake is gorgeous! What a beautiful idea for my husband’s birthday.

The creme is the most difficult part of this recipe. My husband is the best at making the crème Anglaise. So I asked him to be my sous-chef. I made the cake , he made the crème.

Do not hesitate to watch this video  before making a crème Anglaise.

It was a beautiful birthday! Thanks to my children who came home from their respective colleges for this special occasion.

 

Chocolate Cake (by Cyril Lignac)

Preparation : 20 minutes   Baking : 30 minutes    Serves : 6-8

Ingredients :

  • 120 grams (8.5 TBSP) (4.20 oz) (1/2 cup) salted butter
  • 200 grams (7 oz) semi-sweet chocolate 52%-56% cacao
  • 4 large eggs
  • 150 grams (3/4 cup) (5.30 oz) granulated sugar
  • 80 grams (1/2 cup) (2.80 oz) plain flour

Directions :

  1. Cut the butter and chocolate into pieces. Melt into a bain-marie.
  2. In a bowl, beat the eggs with a whisk. Add the sugar and whisk energetically.
  3. Gently stir in the flour and mix well.
  4. Then add the melted butter-chocolate mixture and mix.
  5.  Butter and flour an 9-inch round springform pan. Pour in the cake batter.
  6. Bake for 30 minutes in the preheated oven at 180 degree C. / 350 degree F.
  7. Let the cake cool down before removing it from the pan.

 

Crème Anglaise

Ingredients :

  • 2 large eggs yolks
  • 1 cup (250 ml) heavy cream
  • 1/3 cup (70 grams) granulated sugar
  • 1 Tablespoon Grand Marnier or Cointreau
  • 1/4 teaspoon vanilla extract

Directions :

  1. Whisk egg yolks, cream, sugar, liqueur, and vanilla extract in a small saucepan until smooth.
  2. Place saucepan over medium-low heat and cook, stirring constantly with a rubber spatula scraping the bottom, until mixture is hot and thickens slightly, about 8 to 10 minutes. The thermometer  has to reach 180 degrees F. / 82 degree C.
  3. Remove from heat, strain to remove any over-cooked particles of egg, and allow cool.

Gâteau au chocolat (de Cyril Lignac)

Préparation : 20 minutes   Temps de cuisson : 30 minutes   Pour 6 à 8 personnes

Ingrédients :

  • 120 g de beurre
  • 200 g de chocolat noir à 52%-56% de cacao
  • 4 gros oeufs
  • 150 g de sucre en poudre
  • 80 g de farine

Directions :

  1. Coupez le beurre et le chocolat en morceaux. Faites les fondre au bain-marie.
  2. Dans un saladier, cassez les oeufs et battez-les avec un fouet. Ajoutez le sucre et fouettez énergiquement.
  3. Incorporez la farine et mélangez bien, sans trop fouetter.
  4. Ajoutez ensuite le mélange beurre-chocolat fondu et mélangez.
  5. Beurrez et farinez un moule à manquer de 23 cm de diamètre. Versez-y la pâte à gâteau.
  6. Faites cuire 30 minutes dans le four préchauffé  à 180 degrés C. / 350 degrés F.
  7. Laissez le gâteau refroidir avant de le démouler.

 

Crème Anglaise

Ingredients :

  • 2 gros jaunes d’oeuf
  • 250 ml crème liquide
  • 70 g sucre en poudre
  • 1 cuillère à soupe de Grand Marnier ou de Cointreau
  • 1/4 cuillère à café d’extrait de vanille

Directions :

  1. Fouettez les jaunes d’œufs, la crème, le sucre, la liqueur et l’extrait de vanille dans une petite casserole jusqu’à consistance lisse.
  2. Placez la casserole à feu moyen-doux et faites cuire, en remuant constamment, à l’aide d’une spatule en caoutchouc, en raclant le fond jusqu’à ce que le mélange soit chaud et qu’il épaississe légèrement (après 8 à 10 minutes de cuisson) et que le thermomètre atteigne 82 degrés C. / 180 degrés F.
  3. Retirez du feu, filtrez pour éliminer les particules trop cuites et laisser refroidir.

    Oooh this looks like a great cake with very little flour which would mean it would be very light! I’m sure it would be perfect with crème anglaise. YUM!
