French Rice Pudding / Riz au Lait

This is my grandmother’s recipe. It’s my favorite French dessert. For many generations in my family, we make riz au lait.

You just need milk, round rice (I chose an Asiatic rice : Hakubai Premium Sweet Rice), vanilla and sugar. The most difficult part of this recipe is adjusting the heat after the first boil, because you have to reduce it a lot.

To add more flavor, you can also add the zest of one small orange, preferably organic or 1/4 of teaspoon of orange extract.

It’s best served warm. Rice melting in the mouth, it’s perfect!

Keep the rice pudding in the fridge with a plastic wrap on the top.

 

Ingredients :

  • 1 liter (33.8 oz) milk
  • 250 g (8.80 oz) rice (round)
  • vanilla sugar 9 g (0.32 oz) (I use Dr Oetker brand) or a vanilla bean stick
  • 75 g (2.65 oz) granulated sugar
  • one pinch of salt

Directions :

  1. Rinse the rice with cold water several times
  2. In a saucepan, pour a liter of water with a pinch of salt and bring to a boil. Add the rice and cook for 3 minutes before draining.
  3. Pour the milk into a saucepan. Split and scrape the inside of a vanilla pod and add to the saucepan. Then add the rice, stir and bring to a boil.
  4. At the first boil, reduce heat and cook slowly for about 20-25 minutes, stirring occasionally.
  5. 10 minutes after the first boil, add the granulated sugar and the vanilla sugar (if you do not use a vanilla bean stick). Stop the cooking when the rice is well done. There will remain a little milk in the pan at the end of cooking, it’s normal.
  6. Pour the rice and remaining milk into ramekins or a big serving bowl.

Ingredients :

  • 1 litre de lait
  • 250 g riz (rond)
  • 1 sachet de sucre vanillé (9g) (I use Dr Oetker brand) ou 1 gousse de vanille
  • 75 g sucre en poudre
  • 1 pincée de sel

Directions :

  1. Rinsez le riz à l’eau froide plusieurs fois.
  2. Dans une casserole, versez un litre d’eau avec une pincée de sel et portez a ébulition.  Ajoutez le riz et laissez le cuire 3 minutes avant de l’égoutter.
  3. Versez le lait dans une casserole. Grattez l’interieur d’une gousse de vanille et ajoutez-là avec les grains dans la casserole. Versez le riz, mélanger le riz pour séparer les grains de riz. Portez à ébullition. À la première ébullition, réduire le feu et laissez cuire doucement pendant environ 20-25 mintues en remuant de temps en temps.
  4. 10 minutes après la première ébullition, ajoutez le sucre en poudre et le sucre vanillé (si vous n’utilisez pas de gousse de vanille). Arrêtez la cuisson lorsque le riz est cuit. Il restera un peu de lait dans la casserole en fin de cuisson, c’est normal.
  5. Versez le riz et le lait restant dans des ramequins.

Ce riz au lait est mon dessert préféré. J’en fait plusieurs fois dans le mois. Dégustez ce riz au lait une heure après l’avoir fait. Tiède, il rend toutes ses saveurs! Le lendemain, mon mari a l’habitude de le réchauffer un peu au micro-ondes. Quant à moi, je l’aime bien froid avec de la confiture!
