How to make rice in a pot? / Comment faire cuire du riz dans une casserole?

Traditionaly in China, we cook rice in a pot on the stove.They measure the water above the rice by putting the finger in the pot up to the first knuckle (about 2 cm).

As a novice, I prefer to use this ratio : 1.rice and 1.5 water.

I cooked my rice (using Basmati) like this since a few months. It’s better than in my rice cooker.

Ingredients :

  • 250 g. (8.5 oz) (0.552 lb) rice (Basmati)
  • 375 ml cold water

Directions :

  1. Put the rice in a pot. Rince the rice with cold water several times until the water is clear. Strain the rice, add cold water.
  2. Put the pot on the stove on high setting, with no cover till it boils. And turn it down to low, cover and let it cook for 40 minutes. Do not uncover until it’s finish cooking. If you open it, you will let the steam escape which will interfere with the cooking process.

So you have a perfect rice!  It’s easy as long as you follow the instructions.

Traditionnellement en Chine, on cuit le riz dans une casserole. La méthode dite de “la phalange” est couramment utilisée. Recouvrir le riz d’eau en mesurant l’équivalent d’une phalange d’eau au-dessus de la surface de l’eau (environ 2 cm).

J’avoue que cette méthode est un peu difficile, pour une Française comme moi. J’utilise donc la proportion1:1,5 c’est-a-dire une portion de riz cru pour une portion et demi d’eau.

Ingrédients :

  • 250 g. rice (Basmati)
  • 375 ml d’eau froide

Directions :

  1. Mettez le riz dans une casserole, rincez plusieurs fois jusqu’à ce que l’eau devienne claire, égouttez le riz, ajoutez de l’eau froide.
  2. Mettez ensuite la casserole sur feu fort, sans couvercle, portez à ébullition. Baissez tout de suite le feu au minimum, mettez le couvercle et laisser cuire pendant 40 minutes. N’ouvrez pas le couvercle pendant la cuissson, cela fait partir trop de vapeur d’un seul coup.

    Your rice looks nice, you make it sound so easy, as I am always afraid to use stove top…rice cooker most of the time…
