Langues de Chat - Cats' Tongues Biscuits

 

This biscuit is called Langues de Chat in France, because its shape looks like a cats’ tongue, long and thin.

My husband and I enjoy eating this simple biscuit, its hard to stop eating them. They inspire us memories, because we used to eat them with chocolate mousse when we were kids.

Hot and fresh from the oven, they are the best.

My favorite French chef, Cyril Lignac, inspired me for this recipe.

 

Making : 50 Cats’ Tongues Biscuits  Preparation time : 45 mn   Total time : 1 hour 10 mn

Ingredients :

  • 100 g flour
  • 1 pinch of salt
  • 100 g butter (at room temperature)
  • 90 g confectioners’ powered sugar
  • 1 vanilla pod (optional)
  • 2 eggs
  • 1 orange’s zest

Directions :

  1. Preheat oven to 340 degree F. (170 degree C.)
  2. Sift flour with salt.
  3. In a bowl, cream butter until pale. This can be done in an electric mixer fitted with a paddle. Add one at a time : confectioners’ sugar, the seeds from a vanilla pod, orange’s zest, eggs and flour.
  4. Fill a piping bag fitted with a small nozzle.
  5. On a tray lined with parchment paper, pipe the cats’ tongues biscuits in 5 cm long line (in staggered rows with 3 cm gaps in between) and 1 cm width.
  6. Bake for 10 to 12 minutes, until lightly browned on the side. Cool on wired racks.

Pour 50 biscuits   Temps de préparation : 45 mn  Temps total : 1h10

Ingrédients :

  • 100 g de farine
  • 1 pincée de sel
  • 100 g de beurre (à température ambiante)
  • 90 g de sucre glace
  • 1 gousse de vanille (facultatif)
  • 2 oeufs entiers
  • Le zeste d’une orange

Directions :

  1. Préchauffez le four à 170 degré C. (340 degré F.)
  2. Tamisez la farine avec le sel.
  3. Dans un batteur, fouettez le beurre jusqu’à ce qu’il blanchisse. Incorporez successivement le sucre glace, les graines de la gousse de vanille, le zeste d’orange, les oeufs, et la farine tamisée avec le sel.
  4. Versez la pâte dans une poche garnie d’une douille unie numéro 10.
  5. Sur les plaques de cuisson recouvertes de papier sulfurisé, formez des batonnets de 5 centimètres de long sur 1 centimètre de large (les séparant chacun de 3 cm).
  6. Faites cuire au four 10 à 12 minutes, jusqu’à ce que le contour des biscuits soit doré.
  7. Laissez refroidir sur une grille.

Ces biscuits, si faciles à faire, accompagnent à la perfection la mousse au chocolat, ainsi que la crème à la vanille ou au caramel. Vous pouvez aussi les déguster avec une glace.
