Pink Cupcakes

Pink Cupcakes

 

My daughter Sarah, who is 14 years old, has always been obsessed with chocolate, since she was little.

Her favorite desserts are :

* Chocolate Mousse, easy to make, no baking,

* Moelleux au chocolat, it’s also my favorite cake,

* Brownies, my kids love them!

She loves eating anything with chocolate in every meal.

When we make these pink cupcakes, her father is so happy! Because he is not a big fan of chocolate and these cupcakes are really delicious.

They are pretty with a pink frosting, but  you can choose whatever food coloring and create beautiful cupcakes.

 

Preparation time : 15 minutes Total time : 35 minutes

Ingredients :

For the cupcakes

  • 1 cup (2 sticks) sweet butter, softened
  • 1 cup granulated sugar
  • 2 cups cake flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

For the frosting

  • 3 cups confectioners’ sugar, sifted
  • 1 cup (2 sticks) sweet butter, softened
  • 1 pinch of salt
  • Red food coloring

Directions :

  1. Preheat the oven to 350 degree F. (175 degree C.). Place 18 paper baking cups in muffin pans. Combine all the cupcake ingredients in a large bowl and beat with an electric mixer until smooth and pale, about 2 to 3 minutes. Spoon the batter into the cups. Bake for 20 minutes. remove pans from the oven and cool for 5 minutes. then remove the cupcakes and cool on a rack.
  2. To make the frosting, cream the confectioners’ sugar, butter and salt in a medium bowl with an electric mixer until smooth. Add few drops of the food coloring, and mix until the frosting is an uniform pink. Spoon the pink frosting onto the cupcakes.

    Lovely shade of pink. My husband doesn’t care for chocolate so he would be a fan of the cupcakes but perhaps I might change the color. 😀
