Cucumbers are one of my favorite summer vegetables.
During my July vacation, I spent some days with my mother in law. She loves making cucumber salad. Her salad is so good, because she used to add a big tablespoon of crème fraîche (sour cream). I know i’s not really healthy, but it’s so delicious.
Today I want to share with you a healthy cucumber salad, very elegant and simple.
Crispy, refreshing, it’s perfect for summer!
You have no time to cook? It’s ready in 10 minutes!
- 1 cucumber
- 50 gr (1/2 cup) sliced almonds
- 1 tablespoon champagne wine vinegar
- 2 tablespoons olive oil
- Peel cucumber to leave alternating green stripes. Slice the cucumber in half lengthtwise. Scrape the seeds out with a spoon. Cut into very thin slices.
- Combine vinegar, oil and salt in a medium bowl. Add the cucumber and the sliced almonds, toss well to combine evenly. Serve immediately.
